Chicken and spinach stuffed pasta shells


Yumm! I had these amazing chicken and spinach stuffed pasta shells a few days ago and I needed to share this recipe. I originally got it from Haute Apple Pie, but I just changed the recipe a tad. They were easy to make and quick! This is what you need:

1 box of pasta shells
2 C ricotta cheese
2 chicken breasts
1 1/2 cup of frozen spinach - thawed
2 C shredded mozzarella
1 C grated parmesan
2 cans of tomato sauce
salt
paper

Preheat oven to 375.

Bring a pot of water to a boil and put in the pasta shells with some salt. Cook until the pasta is al dente. Drain and set aside.

Cut the chicken breasts into bite size cubes and cook over meduim heat in frying pan with just a little oil to coat the bottom of the pan. When cooked, add the spinach, just enough to heat up. Dump into a large mixing bowl.

Combine the ricotta cheese, mozzarella, parmasan with the chicken and spinach. Mix ingredients until well combined. Set aside.

In another bowl pour both cans of tomato sauce and season with salt and pepper.

Begin to spoon the chicken, spinach and cheese mixure into the shells and place in a baking dish. I used a tablespoon from my measuring spoons to get the right amount each time.

After your done filling all the shells and placing them into the baking dish, spoon the tomato sauce over the shells generously.

Finally add mozzarella cheese on top of the pasta shells, lightly. Bake for about 20 minutes and enjoy!

Heaven has arrived on my doorstep

Guess what has arrived on my doorstep today? My order for French Paper!

If you don't already know, I print on paper from French Paper company always! You can't beat the quality. So the moment I saw it, I cut it open with the nearest object I had that could do the job.


I opened it furiously with my car keys to see what I had been waiting 5 days for. And I'm happy to see that they also included samples for their other paper products.


So luckily this came in time, I can get back to creating more things. Hurray!

Valentine's Day cookie sandwich

Hey everyone!

I stumbled upon this blog called "A Small Snippet", where I found this great idea for Valentine's Day cookie sandwich's.

Now I changed the look of these compared to the recipe instructions because I couldn't bare to waste that much cookie to make them heart shaped. By the look of the picture over at LeAna's blog, I couldn't wait until the big day to make them so we had them last night for dessert. Here is what I got:


Not bad huh? They were very easy! In fact, I didn't know you can take any cake batter and make it into a cookie by just adding 1 stick of butter and 2 eggs.

The recipe is as follows:
1 box of red velvet cake batter
1 stick of butter (unsalted)
2 eggs


This recipe will yield approx. 24 cookies.

Combine all ingredients in a mixing bowl, and use a cookie scoop (I used a tablespoon from my measuring spoons) and scoop out and place on cookie sheet (Tip - dip measuring spoon in water after every scoop of cookie batter, it makes it very easy to put on the cookie sheet).

After you bake at 350 degrees for 10 min, let them cool on a rack. Grab your cookie cutter in the shape you desire. I grabbed the circle, because it was super easy and as described before I couldn't bare wasting that much cookie.

After I cut all my circle shapes, I then followed this very simple way to put frosting on. I don't own a pastry bag, so I used a Ziploc and just cut off the tip to use as the base of the pastry bag.
After I piped on a fair amount, I used another cookie and squished them together, and viola, a cookie sandwich!

Valentine's Day free printables!

Valentine's Day is such a sweet holiday. Although I'm a firm believer in celebrating it everyday of the year, it just warms my heart that no matter where you turn there are iconic things surrounding you to remind you to be with the people you love the most.
And if the title of this post didn't already tell you, there are free Valentine's Day printables available for you all!

I designed these water bottle wrappers that you can use on almost any basic water bottle. Depending on the type of printer you have and paper you use these may not be water resistant, but they sure are cute! You can use these for:
- a Valentine's Day get together
- at the office
- my daughter also reminded me that I can wrap one around her sippy cup
- any cup
- any object you want to wrap it around!

You can find the download here. Just print on an 8.5 x 11 sheet of paper (your choice) and cut along the dashed lines. Peel away the label on the water bottle and wrap your Valentine's Day one around the bottle and tape down. Viola! It's that simple!



Another treat I have for you all are my Lolipop Garments. These are 1.5 inch circles that you use them for:
- old fashioned lolipops
- york pepermint patties
- cupcake toppers (tape two together on a lolipop stick, and stick in a cupcake)
- envelope seals (print on 1.5 inch cicle labels, or just add tape to the back of your cardstock)

or any other thing you can think of! As you can see the uses for these cuties are endless.

And lastly, you can celebrate Valentine's Day with anyone, with this cute card. It lets the receiver know that you think they are sweet without the commitment of asking them to be your Valentine.
You can give these to:

- Children at daycare
- Children at school

You can even use them as a gift tag to give a gift full of treats!

You can find the download here. Just print on an 8.5 x 11 cardstock and cut along the dashed lines to get 6 Valentine's Day Cards. If you have a rounded corner cutter, you can use it to round the corners like I did.

I'm back and badder than ever!

Hey everyone!

Missed me much? Well I'm sorry for not posting in a very long time. With the holiday season that approached ever so fiercely, I couldn't keep up with my blog, etsy, life and work. But finally the holiday season is over and even though it has left some great memories, I'm more than ready to fully dive in to my blog and business.

I have been working like a mad women to get more things up on my shop and have been super busy filling orders and creating new items.



I'm also trying to get a cohesive look to my blog and having some trouble on what I want it to look like. I'm telling you so I don't freak you out when you visit my blog and don't see the same blog when you visit next.

Ok, now I'm off to work on some Valentine's Day freebies for you all!
